This recipe is great to have in your back pocket for salads, and can be used to fish for chicken marinades too.
Once you get the hang of the ratios you can pair up or down depending you needs, and adjust ingredients for you salad or marinade.
The picture below is a simple version I made for my dinner tonight, in my grandmothers glass pitcher. Also a great thing to have, I use it for everything from watering house plants to making salad dressing. Enjoy!
Ingredients:
1/4 cup vinegar

1/2 cup olive oil
1 teaspoon mustard
1 clove garlic, minced (optional)
Salt and pepper to taste
1 teaspoon honey or maple syrup (optional, for sweetness)
Instructions:
Combine the vinegar and mustard. Stir well to blend.
Gradually whisk in the olive oil. To create a smooth, well-blended dressing.
*** You can stop here and have a great dressing, or continue.
3. Add the minced garlic if desired, stir again to combine.
4. Season with salt and pepper to taste. If you want a sweeter dressing, you can add honey or maple syrup and mix well.
Optional Add Ons:
Add herbs: Experiment with fresh or dried herbs like basil, oregano, thyme, or parsley to add extra flavor.
Citrus twist: Squeeze in fresh lemon or orange juice for a citrusy kick.
Parmesan cheese: Grate Parmesan cheese into the dressing for a cheesy touch
